Agricultural Food Microbiology
Food security stands as a global priority dedicated to guaranteeing all individuals consistent, safe, and nutritious access to food that supports active and healthy living. Within the agri-food supply chain, microorganisms exert dual and profound effects: they underpin fermentation, flavor formation, and nutrient enhancement, yet also drive spoilage, pathogenic contamination, and safety risks, directly affecting supply stability, quality consistency, and public health. Advancing the scientific understanding and technological control of food-related microbes has become indispensable to safeguarding food security and reducing postharvest losses. Against this backdrop, innovation across microbial science and technology has become a core driver for modernizing the agri-food system. In the realm of microbial safety and risk prevention and control, integrated strategies spanning pre-harvest, processing, storage, and circulation are being developed to identify, predict, and mitigate hazards from spoilage organisms. These efforts strengthen early warning and whole-chain governance, minimizing health safety risk and economic losses from agri-food microbiology. This Topic aims to explore frontier advances in agricultural and food microbiology that elevate safety, quality, and sustainability across the supply chain. We seek to assemble state-of-the-art research addressing fundamental microbial mechanisms, whole-chain risk governance, rapid detection innovation, and green preservation technologies. To foster knowledge exchange and technological translation in agri-food microbiology, we welcome submissions addressing, but not limited to, the following themes:Fundamental insights into microbial community structure and function in agricultural products and foodsMechanisms, modeling, and early warning of microbial risks in the agri-food systemRapid and intelligent microbial detection and identificationWe accept a broad range of manuscript formats, including Original Research Articles presenting novel methodologies and impactful advances, Methodology Articles detailing innovative experimental or analytical frameworks, Review Articles offering comprehensive syntheses of the field, and Perspective Articles that highlight emerging challenges, future directions, and translational opportunities in agri-food microbiology. In the field of agricultural food microbiology, the papers on basic research, technological innovation and application practice around the whole industrial chain from farmland to dining table are published, aiming at systematically revealing the internal relationship between microorganisms and agricultural products, food production, processing and circulation, thus effectively improving the level of food safety and quality assurance, promoting the breakthrough of risk prevention and control and detection technology, promoting the industrialization of green preservation and anti-corrosion technology, and providing forward-looking guidance for solving major scientific problems and technical bottlenecks in the industry. Through the communication and dissemination of these papers, we can accelerate the construction of a scientific, accurate and efficient full-chain safety control system and help the agricultural food industry achieve green, sustainable and high-quality development. The specific publishing scope includes, but is not limited to, the following directions:1. Basic research on agricultural products and food-related microorganisms: including microbial community structure, ecological interaction rules, and the impact of environmental factors on community dynamics.2. Microbial safety and risk prevention and control of agricultural products and food: research on the sources, transmission routes, and pathogenic mechanisms of microbial pollution; detection, degradation, and prevention and control technologies for microbial toxins; research on microbial risk assessment, early warning model construction, and the whole-chain safety management and control system.3. Microbial detection and analysis technologies for agricultural products and food: research and development, optimization, and application verification of new microbial detection technologies; research on the improvement of the sensitivity and specificity of detection technologies and their industrial transformation.
