Electrochemical (Bio)sensors for Nutrition, Health, and Food Safety

The field of nutrition science is being transformed by advances in screen-printed electrochemical sensors and biosensors, which offer new ways to detect vital nutrition-related analytes quickly and accurately. Traditional measurement methods can be slow, costly, and ill-suited for real-time or on-site monitoring. As a result, there is growing interest in flexible, portable sensor platforms that can assess vitamins, antioxidants, glucose, and safety-related markers both in food and biological samples. While promising results have been obtained in laboratory settings, critical gaps remain in demonstrating validated sensor performance in real-world scenarios and in gauging their true impact on dietary assessment, health, and food safety. This Research Topic aims to showcase innovations that bridge the gap between laboratory development and practical application of screen-printed electrochemical sensors and biosensors. The main objectives include highlighting sensors validated for measuring nutrition-relevant analytes in complex samples, and emphasizing their contribution to diet monitoring, health personalization, and ensuring food quality and safety. This Research Topic invites contributions highlighting the use, validation, and demonstrated impacts of screen-printed electrochemical sensors and biosensors for nutrition, health, and food quality or safety. We welcome articles addressing, but not limited to, the following themes: - Use of sensors to measure vitamins, antioxidants, and glucose for personalized nutrition strategies - Detection of food quality markers such as polyphenols, freshness indicators, and spoilage markers - Assurance of food safety through sensitive detection of pathogens, pesticides, toxins, and adulterants - Validation of biosensor performance in complex and real-world food or biological samples.
