Nutritional neuroscience: How sensory signals influence diet and cognitive function

Despite growing awareness of the role of nutrition in health and cognitive function, the intricate neural mechanisms linking sensory signals and dietary behavior remain underexplored. Sensory cues like taste, smell, and texture significantly influence food preferences, portion control, and satiety, yet how these signals interact with brain regions involved in reward, decision-making, and memory is not fully understood. This gap in knowledge limits our ability to develop effective interventions for nutritional challenges such as obesity, eating disorders, and age-related cognitive decline. To address this, interdisciplinary research combining sensory neuroscience, nutrition science, and cognitive neuroscience is essential. By leveraging advanced tools like neuroimaging, electrophysiology, and computational modeling, researchers can unravel the neural pathways connecting sensory inputs to dietary behavior and cognitive health. Insights from this research could inform the development of targeted interventions, such as personalized nutrition strategies and sensory-based therapies, to promote healthier eating habits and enhance cognitive well-being.This Research Topic aims to explore the complex interplay between sensory signals, nutrition, and cognitive function, focusing on the neural mechanisms that underpin dietary behaviors and their impact on brain health. We invite contributions addressing themes such as the neural processing of taste, smell, and texture in food perception; the role of sensory cues in modulating reward pathways and satiety; and the impact of nutrition on cognitive processes like memory, attention, and decision-making. We encourage research examining the effects of sensory impairments on dietary behaviors, as well as studies on the influence of cultural and environmental factors on sensory-driven food choices.
