Nutritional Quality of Postharvest Fruits and Vegetables
The area of postharvest fruits and vegetables focuses on understanding and enhancing their nutritional quality, which plays a critical role in public health and food security. Current challenges include the dynamics of nutrient changes during storage, regulation through various treatments, and employing novel technologies to maintain or improve nutrition without compromising safety. While significant progress has been made in understanding how storage affects nutrients like vitamins and bioactives, there are still gaps in comprehending the precise mechanisms at play, especially at the molecular level. Innovative solutions to extend shelf life while maintaining safety remain crucial, as does the need to address potential risks from chemical residues. This Research Topic aims to explore and expand upon the knowledge of postharvest fruit and vegetable nutritional quality. Specific objectives include examining the dynamic changes during storage, understanding the regulatory effects of physical, chemical, and biological treatments, and revealing the physiological, biochemical, and molecular mechanisms behind nutritional changes. Furthermore, the research seeks to advance the development of novel technologies designed to enhance nutritional value and shelf life, ensuring both nutritional quality and food safety. Key questions involve discerning the relationships between postharvest treatments and potential risks from chemical preservatives, alongside evaluating biological control methods. To gather further insights into the dynamics and regulation of postharvest fruit and vegetable nutrition, we welcome articles addressing, but not limited to, the following themes:o Dynamic changes in nutritional quality during postharvest storage and circulationo Regulation of nutritional quality by postharvest treatmentso Mechanistic studies on nutritional quality changeso Development and application of novel postharvest technologieso Relationship between postharvest treatments, nutritional quality, and food safety.
