The Role of Biomolecules in Functional Fermented Foods

Fermented foods represent a significant area in the field of functional nutrition, offering a promising means to enhance health through their intrinsic bioactive compounds. In recent years, research has intensively examined the bioavailability and efficacy of antioxidants, peptides, and enzymes found in such foods - each contributing uniquely to health improvement. While numerous studies document the positive outcomes of consumption, gaps remain in understanding the precise mechanisms by which these compounds foster health, especially concerning gut microbiota modulation and systemic anti-inflammatory response. This Research Topic aims to compile cutting-edge research exploring the molecular mechanisms and health implications of biomolecules in functional fermented foods. By addressing key questions like which fermentation conditions optimize bioactive production and which compounds offer the most significant health returns, the topic will delve into these bioactives' roles in modulating immune function, inflammation, and metabolic health. This exploration is intended not only to substantiate existing benefits but also to unlock potential avenues for novel product development with enhanced nutritional profiles. To gather further insights in understanding the role of biomolecules in functional fermented foods, we welcome articles addressing, but not limited to, the following themes:- Optimizing fermentation conditions for bioactive compound enhancement- Health impacts of specific fermented foods and their bioactive constituents- Novel fermentation techniques to produce functional foods with superior properties- Interactions between bioactive compounds and gut microbiota- Industrial applications and regulatory considerations for functional fermented foods. We invite submissions from food scientists and specialists in biomolecules and fermented foods. Contributions will form a rich repository of knowledge, ultimately aiding in the prevention of metabolic syndromes and bolstering the scientific community's understanding of functional nutrition.
