The Role of Ultra-Processed Foods in Shaping Food Culture and Health: Classification Frameworks, Market Strategies, and Population-Level Research

In recent decades, increasing consumption of ultra-processed foods (UPF) has raised attention for its implications for human and planet health. UPF-rich dietary patterns are replacing traditional and long-established diets, with a deterioration in food quality and nutritional profile. Despite evidence from many epidemiological studies of a detrimental health effect, it is necessary to broaden the research, linking UPF consumption to the risk of mortality and morbidity, towards internationally agreed classification systems and robust mechanistic studies. Changes in food culture, the effect of different communication campaigns, and the tools used to support the population in making informed and conscious choices, must also be addressed. The purpose of this Research Topic is to explore, using a multidisciplinary approach, the possible multiple implications of increased UPF consumption, ranging from their production and classification to the effects on eating habits, both in terms of food choices and skills in meal preparation. Additionally, this Research Topic aims to explore the intersection of marketing strategies with policies implemented to raise public awareness and promote healthier more equitable and conscious nutritional behaviour across different population targets. To gather further insights into the multifaceted role of ultra-processed foods and beverages in shaping food culture and populations’ health, we welcome articles addressing, but not limited to, the following themes:• New proposal to classify and identify UPFs.• Mechanistic studies on the biological effects of UPF or of Markers of processing ingredients.• Marketing strategies.• Proposals of actions and strategies to limit UPF consumption.• Changes in eating habits, food culture and traditional diets.
